Evaporation is an indicator of the intensity of aging, the so-called "Angels' share". At the House of Pampero, the annual losses of the liquid inside each barrel is one of the highest in the world, between 9% and 10% annual average. Our
type of alcohol, the previous selection of our barrels and the extreme climate of Ocumare del Tuy are key factors in the magic of creating an exceptional liquid. The true magic does not lie in age, since it is a relative factor, the real
secret lies in the art of the blend, when the Rum Master blender combines the different types of liquids in the cellar to create a balanced and high quality combination.
It is the process where our rum becomes that exceptional liquid. The aging of Ron Pampero is impacted by several elements: the type of alcohol to be aged, the type of barrel used and the climatic conditions around the distilleries in
Ocumare del Tuy. In the House of Pampero we age rums in ex-sherry and ex-bourbon barrels, without replacing the losses. The temperature and humidity conditions in our cellars cause the liquid to change inside the barrels as they expand or
contract, as a result of the changes in temperature between day and night. This allows the liquid to absorb the flavors of the barrels and to generate that sensory richness in the final product.
